Shrimp with Vegetables & Curry

A’rydes w’Khodar bil Kari

Serve it hot or warm with plain rice and the side topping.

Procedure

  1. Place oil in a skillet over medium-high heat, stir in onion and sauté until transparent. Add shrimp and sauté until they turn pink, then sprinkle with salt and pepper.
  2. Push the shrimp to the side of the skillet with a spoon. Stir flour into the oil in the middle, and then combine flour mixture with the shrimp.
  3. Adjust heat to high, add corn, peas and carrots and sauté together for a minute, then add water and bring to a boil.
  4. Stir in curry, reduce heat to medium and cook for 5 more minutes, then serve.

Serve it hot or warm with plain rice and the side topping.

Tip — If you keep raw, shelled shrimp on hand, as well as frozen corn, carrots and peas, this dish is easy to prepare at a moment’s notice.
