Shrimp with Vegetables & Curry

Serve it hot or warm with plain rice and the side topping.
Procedure
- Place oil in a skillet over medium-high heat, stir in onion and sauté until transparent. Add shrimp and sauté until they turn pink, then sprinkle with salt and pepper.
- Push the shrimp to the side of the skillet with a spoon. Stir flour into the oil in the middle, and then combine flour mixture with the shrimp.
- Adjust heat to high, add corn, peas and carrots and sauté together for a minute, then add water and bring to a boil.
- Stir in curry, reduce heat to medium and cook for 5 more minutes, then serve.
Serve it hot or warm with plain rice and the side topping.
Tip — If you keep raw, shelled shrimp on hand, as well as frozen corn, carrots and peas, this dish is easy to prepare at a moment’s notice.
