Chicken Kebabs

Serve hot with fresh pita bread, plain rice, fattoush, and garlic sauce.
Procedure
- Preheat the grill on high (500 °F).
- Rinse the chicken, drain, and pat dry with a paper towel. Cut each tender into 3 pieces and set aside.
- On a deep platter, combine the lemon juice, garlic, olive oil, black pepper, paprika, and salt. Add the chicken and cover completely with the marinade. Place the tomato, onion, and green pepper on top and marinate for 7 minutes.
- Place the chicken pieces onto the skewers, alternating chicken with 2 tomato wedges and 1 piece each of onion and pepper per skewer. Grill for 2 to 3 minutes on each side, or until done.
Serve hot with fresh pita bread, plain rice, fattoush, and garlic sauce.
Tip — Fresh chicken can be prepared on skewers a couple of days in advance if kept refrigerated in a covered container. If you don't want to head outside to grill, set the oven to broil and place the kebabs on the bottom rack for about 7 minutes per side.
