Potatoes with Cilantro

Serve hot or warm as an appetizer.

Procedure

  1. Place the oil in the skillet over medium heat, add the diced potatoes, and cook covered for 10 minutes.
  2. Remove the lid, stir well, replace it, and cook for 10 more minutes — or until soft — stirring twice.
  3. Add the chopped cilantro and garlic, stir, and cook briefly. Sprinkle with salt, coriander, and sumac, and mix well. Turn off the heat, transfer to a platter, and serve.

Serve hot or warm as an appetizer.

Tip — This dish tastes best when fresh.
