Potatoes with Cilantro

Serve hot or warm as an appetizer.
Procedure
- Place the oil in the skillet over medium heat, add the diced potatoes, and cook covered for 10 minutes.
- Remove the lid, stir well, replace it, and cook for 10 more minutes — or until soft — stirring twice.
- Add the chopped cilantro and garlic, stir, and cook briefly. Sprinkle with salt, coriander, and sumac, and mix well. Turn off the heat, transfer to a platter, and serve.
Serve hot or warm as an appetizer.
Tip — This dish tastes best when fresh.
