Potato Soup with Cilantro

Serve it hot or warm with French bread and salad. A very delicious soup!

Procedure

  1. In a large saucepan, melt clarified butter over medium heat. Cook onion until it is browned, about 5 minutes.
  2. Add potatoes, carrot, chicken broth, salt and caraway seeds, sauté for a few minutes, then add water and bring to boil over high heat for 7 minutes.
  3. Reduce heat to medium-low and cook for 5 more minutes or until potatoes are tender.
  4. Turn off heat and stir in the cilantro. Let it sit for 2 or 3 minutes and serve.

Serve it hot or warm with French bread and salad. A very delicious soup!
