Potato Salad
Salatet Batata
Serve it at room temperature as a salad with fresh pita bread, or as an appetizer.
Procedure
- Place potatoes in a medium saucepan, add water to cover and cook over high heat until tender. Discard hot water and peel potatoes under running water, then cut them into ¾-inch cubes and place in a bowl. Add scallions, parsley and pepper, toss, and set aside.
- In a large bowl, mix garlic salt, lemon juice and oil. Fold dressing into potato mixture to combine, adjust salt and pepper, and serve.
Serve it at room temperature as a salad with fresh pita bread, or as an appetizer.
Tip — You can refrigerate leftover Potato Salad and enjoy it the next day.
