Plain, freshly-made yogurt should be kept in a warm place to set overnight or for at least eight hours.

Procedure

  1. Set aside 1 cup of milk for later use and pour the rest into the pot.
  2. Cook the pot over medium-high heat to a boil, about 10 minutes.
  3. Turn off heat and set milk aside to cool for 20 minutes.
  4. Mix the cup of milk with the yogurt to combine.
  5. Dip a thermometer in the pan of milk. When the temperature reaches 90 degrees F., slowly pour in the yogurt mixture while stirring constantly, and keep stirring for 1 minute.
  6. Place the cheesecloth over the pot, then cover pot and set aside in a warm place. (Usually, I keep it in the oven until the next day, when I uncover the yogurt and place it in the refrigerator for several days before using it.)
  7. Store extra yogurt in a covered container.
Tip — Yogurt refrigerates well for up to a month.
