Serve it hot or warm as an appetizer, or as a main dish with Cooked Yogurt Sauce and Cracked Wheat with Lentils.
Preparation
- Spinach Pie Dough prepared and set aside
- Meat with Onion prepared and set aside
Procedure
- Place 1 tablespoon vegetable oil in a pan over medium-high heat, stir in pine nuts and toast them. (Be careful, they burn quickly). Remove nuts with a slotted spoon, add them to the meat with onion, and discard oil.
- Roll out dough on a lightly flowered surface with a rolling pin, until it is slightly less than 1/8 inch in thickness.
- Cut dough with cookie cutter into 60 circles. Gather trimmings into a ball and cover with plastic to rest.
- Turn the dough circles upside down and drop 1 tablespoon of meat in the middle of each. Fold the circles in half, then gather and press them to close the edges tightly into a half-circle or crescent shape (see DVD).
- Bake for 7 minutes or until light golden brown, turning them once after 5 minutes.
Serve it hot or warm as an appetizer, or as a main dish with Cooked Yogurt Sauce and Cracked Wheat with Lentils.
Tip — Filling can be made a couple of days in advance if kept refrigerated. Leftover dough freezes well for up to a month.
