Lupini Beans

Serve it for snack or as a part of appetizer.
Preparation
- Rinse lupini beans and place them in a pot to soak overnight with double the amount of water.
Procedure
- The next day, place pot over high heat and bring to boil for 10 minutes.
- Turn off heat, drain and discard water. Wash beans in fresh water to cool off and taste one bean. If it tastes bitter, soak beans in water for a day, changing the water several times to rinse out the bitterness, then drain and discard water.
- Sprinkle lupini beans with salt, refrigerate for an hour and serve.
Serve it for snack or as a part of appetizer.
Tip — Refrigerate leftover beans in a covered container for up to a week.
