Lupini Beans

Serve it for snack or as a part of appetizer.

Preparation

  • Rinse lupini beans and place them in a pot to soak overnight with double the amount of water.

Procedure

  1. The next day, place pot over high heat and bring to boil for 10 minutes.
  2. Turn off heat, drain and discard water. Wash beans in fresh water to cool off and taste one bean. If it tastes bitter, soak beans in water for a day, changing the water several times to rinse out the bitterness, then drain and discard water.
  3. Sprinkle lupini beans with salt, refrigerate for an hour and serve.

Serve it for snack or as a part of appetizer.

Tip — Refrigerate leftover beans in a covered container for up to a week.
