Lebanese Cookies

Serve it for dessert, a snack or at breakfast with fruit.
Procedure
- Heat oven to 325 degrees F.
- Place confectioner’s sugar and butter in food processor and blend until the mixture is white and fluffy. Add flour and process until it forms a ball. Transfer into a bowl, cover, and let it rest for 10 minutes.
- Split the dough into 5 equal parts. Dip your fingers in the flour and form each part into the shape of a large hot dog. Place one part on a cookie sheet and slice it into 5 pieces with ¼ of an inch between them.
- Finish the remaining parts in the same way. Top each piece with half of a pistachio nut and bake on the middle rack of the oven for 15 minutes. Do not let the cookies brown. Serve when cooled.
Serve it for dessert, a snack or at breakfast with fruit.
Tip — Lebanese Cookies can be kept in a closed container for a couple of weeks.
