Kibbeh Dough

Procedure
- In a large bowl, wash the burghul with cold water several times, drain well, and set aside.
- Grate the onion over the burghul with a fine hand grater. Add the ground meat. Sprinkle with salt, seven spices, black pepper, and cinnamon, and mix to form a meat dough.
- Split both the meat dough and chopped mint into three equal parts. Place one part of the dough in the food processor. Add one part chopped mint, one tablespoon water, and one ice cube. Process until the dough sticks together and forms a ball, about 40 seconds.
- Remove the kibbeh dough from the processor and finish the remaining two parts of the meat dough in the same way.
- Combine all the kibbeh dough with your hands in a large bowl and set aside until needed.
Tip — The dough should be manageable and soft.

Meat with Pine Nuts

Procedure
- Sauté the pine nuts in the oil over medium-high heat until golden brown — careful, they burn easily. Transfer with a slotted spoon to a platter lined with paper towels. Reserve the oil.
- Add the meat to the reserved oil and cook over medium-high heat until the meat is browned and the juice evaporates, about 5 minutes.
- Sprinkle the meat with salt, seven spices, black pepper, and cinnamon; stir well and turn off the heat. Add the toasted pine nuts and set aside.
Tip — This filling can be prepared a few days in advance. It is also a delicious topping for Lebanese spaghetti. Pine nuts can be toasted in a hot oven for a couple of minutes while the meat is cooking.
