Kafta Kebabs
Kafta Mashwiyeh

Serve hot or warm with hummus or rice, yogurt cucumber salad, or tabbouleh.
It is usually the butcher who prepares the traditional kafta in Lebanon. In this recipe I will show you how to prepare your own by mixing ground meat, onion, and parsley in an electric food processor.
Procedure
- Preheat the grill on high (500 °F) or start the barbecue.
- Place the parsley, onion, and garlic in the food processor. Pulse on and off until finely chopped, about 40 seconds.
- Place the ground meat in a large bowl and add the salt, seven spices, black pepper, cinnamon, and crushed chili. Stir in the parsley mixture and blend well.
- Divide the blended meat into 6 equal portions.
- Wet your hands with cold water and roll one meat portion on a large cutting board with the palm of your hand into a 6- or 7-inch cylinder. Finish the remaining portions in the same way and set aside.
- Pierce each meat cylinder lengthwise through the middle with a skewer. Grill evenly for 2 to 3 minutes or until cooked to your liking. (You can also grill them without the skewers.)
- Transfer the cooked cylinders from the skewers to the pita bread, placing 2 in each pita.
Serve hot or warm with hummus or rice, yogurt cucumber salad, or tabbouleh.
Tip — If the meat is fresh, you can prepare the meat skewers a day in advance and refrigerate in a covered container.
