Chickpea Puree
Hummus bi Tahini

Serve cold or at room temperature with pita bread and pickles.
Although convenient hummus dips are available at most supermarkets, making your own is a snap and can help reduce the amount of sodium. If you use canned chickpeas, be sure to rinse them to remove most of the added salt.
Preparation
- To garnish: 1 tablespoon whole chickpeas, 1 tablespoon chopped parsley, ½ teaspoon paprika, 1 tablespoon extra virgin olive oil.
Procedure
- Puree chickpeas and garlic in a food processor.
- Add sesame seed paste (tahini) and process to blend very well.
- Add salt and lemon juice and process; add oil and process until the puree is creamy. Thin it to taste with a tablespoon of reserved chickpea liquid, lemon juice, or extra olive oil.
- Transfer to a platter, garnish with whole chickpeas and parsley, sprinkle with paprika, and pour olive oil over the top.
Serve cold or at room temperature with pita bread and pickles.
Tip — This dish can be served as an appetizer, plain for breakfast, or topped with cooked ground meat and pine nuts for lunch or dinner. It will keep in the refrigerator for up to a week.
