Gingerbread Man cookies are very delicious and fun, especially when you first read the Gingerbread Man story to your child. This recipe was a favorite of my children.
Procedure
- Mix molasses, brown sugar, cold water and shortening in food processor. Add remaining ingredients except frosting and process until mixture forms into a ball. Transfer to a bowl, cover and refrigerate for 10 minutes.
- Ask an adult to heat oven to 350 degrees F.
- Roll dough on a floured board until it is ¼ inch thick. Cut with a floured Gingerbread Man (or Gingerbread Girl) cookie cutter.
- Place them about 2 inches apart on a lightly greased cookie sheet. Ask an adult to bake cookies until no indentation remains when touched, about 10 to 12 minutes. Remove from oven and let them cool.
- Beat powdered sugar, vanilla and half-and-half until smooth and of spreading consistency. Frost each cookie by dipping the brush in the frosting and spreading it on the top. Place aside to dry, then store in a covered container.
Serve for dessert or as a snack.
Tip — Dough can be made few days in advance if refrigerated. Be sure to bring dough to room temperature before rolling it out.
