Fried Eggplant

Serve it hot, warm or cold with fresh pita bread, pomegranate sauce, Tomato & Cucumber Salad and hummus, or with just the fried pita bread as an appetizer.

Fried vegetables (Ma’ali) are so delicious. After the vegetables are fried, it is customary also to fry pieces of pita bread until they are golden brown and serve them as an accompaniment to the vegetables.

Procedure

  1. Place sliced eggplant on a plate lined with paper towels and sprinkle slices with salt. Set aside for 10 minutes, then pat dry with a paper towel.
  2. Place oil in the deep fryer over high heat for 3 minutes. Add sliced eggplant and fry until golden brown on both sides.

Serve it hot, warm or cold with fresh pita bread, pomegranate sauce, Tomato & Cucumber Salad and hummus, or with just the fried pita bread as an appetizer.

Tip — The eggplant slices can be cooked a couple of days in advance. They also taste delicious in a sandwich with tomato, cucumber and pomegranate sauce.
