Cracked Wheat with Chickpeas

Serve it hot or warm with Lebanese Garden Salad.

Procedure

  1. Heat oil in a medium-sized pot on medium-high for 1 minute. Stir in onion and sauté until golden brown, about 3 minutes. Stir in tomatoes and sauté several more minutes.
  2. Add drained cracked wheat, salt and black pepper to the pot, pour in water and bring to a boil.
  3. Stir and cook until the water no longer looks soupy, but there is still a generous amount of liquid left. Cover pot, reduce heat to low and simmer for10 minutes.
  4. Turn off heat and let it sit for a few minutes before serving.

Serve it hot or warm with Lebanese Garden Salad.

Tip — This dish tastes best when it is freshly made. Meat and broth can be substituted for the tomato and water (see Lamb Shanks with Toasted Bread).
