Chocolate Cake

Serve it at room temperature by itself or with ice cream
Procedure
- Preheat oven to 375 degrees F.
- In a large bowl, measure flour, sugar, cocoa, baking powder and salt. Stir to combine and set aside.
- Crack eggs in a medium-sized bowl, discard shells and add vanilla. Mix on high with electric mixer for 2 minutes.
- Add milk and butter, and mix for another minute. Pour wet mixture over dry mixture and gently fold until well blended.
- Slowly pour mixture into the pan, place it in the oven on the middle rack and bake for 25 minutes.
- Open the oven and insert a toothpick or the tip of a thin sharp knife into the middle of the cake until it touches the bottom of the pan. The toothpick should come out clean; if it comes out coated with batter, bake the cake for 5 more minutes.
- When cake is done, take it out of the oven and let it sit for 10 minutes, then invert it onto a rack to cool.
Serve it at room temperature by itself or with ice cream
Tip — When the cake is cool, cover with plastic wrap for a week or refrigerate in a closed container for up to 2 weeks.
