Chicken Fillet with Tomato Sauce

Serve it hot with mashed potatoes, salad, pita bread and lemon wedges.
Procedure
- Wash and drain chicken pieces, rub salt all over them, and pat dry with a paper towel.
- Pour oil into a medium-sized skillet over medium-high heat. Add chicken pieces and cook for 2 minutes on each side.
- Add garlic and sauté briefly. Sprinkle in flour and stir to absorb oil.
- Slowly pour in tomato sauce while stirring to combine with flour. Continue to stir until sauce is smooth in texture.
- Turn heat to high and slowly stir in water. Add lemon juice, pepper and salt, stir well to combine, and bring to a boil.
- Reduce heat to medium-low, turn the chicken pieces over, and cook covered 5 more minutes. Remove from heat until ready to serve.
Serve it hot with mashed potatoes, salad, pita bread and lemon wedges.
Tip — To save time, cook the mashed potatoes while you are preparing the chicken.
