Cauliflower Stew
Arnabeet b’lahmeh
Serve it hot with Rice with Vermicelli, pita bread, lemon wedges, radishes, scallions and salad.
Preparation
- Separate cauliflower head into florets, wash, and shake to dry.
Procedure
- Heat oil in deep fryer on high for 3 minutes or until oil is very hot. Fry cauliflower florets until golden brown and transfer to a platter lined with paper towels.
- Meanwhile, melt butter in a saucepan over high heat, add meat, and stir with a fork to separate. Cook for 5 minutes until moisture evaporates, then sprinkle with cinnamon, pepper, seven spices and salt. Stir in cilantro and crushed garlic and cook for one minute.
- Pour 3 cups water into meat mixture and bring it to a boil. Add the fried florets and cook for 5 minutes, then reduce heat to medium low, cover, and simmer 5 more minutes. Serve immediately.

Tip — Fried cauliflower florets can be served alone as an appetizer with tahini sauce (see Falafel). Cauliflower can be cooked in boiling salty water for 7 minutes then drain well and place in a pan with 2 table spoons olive oil and cook in the oven until golden brown on 400F. And could be cooked the same way without meat for veggies lovers.
