Arabic Omelet

Serve it hot or warm with a baked potato, pickles, tomato, and Yogurt Cucumber Salad.

Procedure

  1. Heat oven to 400 degrees F. Place onion in a medium-sized bowl, sprinkle with salt, and rub it into the onion with your fingers. Crack the eggs over the onion and beat together.
  2. Stir in parsley, mint, pepper and seven spices, and fold in flour to combine. Pour the mixture into the pan.
  3. Place the pan on the stove over medium-high heat. Heat the bottom of the pan for a couple of minutes while rotating the pan to cook evenly. Place pan on the middle rack of the oven and bake for 10 minutes.
  4. Remove pan from the oven, brush the top of the omelet with oil, and return it to the oven for 5 minutes or until golden brown.
  5. Cut omelet into squares and serve.

Serve it hot or warm with a baked potato, pickles, tomato, and Yogurt Cucumber Salad.

Tip — If all the ingredients are fresh, the batter can be prepared a day in advance. Cooked ground meat may be added to the batter before baking.
