Arabic Omelet

Serve it hot or warm with a baked potato, pickles, tomato, and Yogurt Cucumber Salad.
Procedure
- Heat oven to 400 degrees F. Place onion in a medium-sized bowl, sprinkle with salt, and rub it into the onion with your fingers. Crack the eggs over the onion and beat together.
- Stir in parsley, mint, pepper and seven spices, and fold in flour to combine. Pour the mixture into the pan.
- Place the pan on the stove over medium-high heat. Heat the bottom of the pan for a couple of minutes while rotating the pan to cook evenly. Place pan on the middle rack of the oven and bake for 10 minutes.
- Remove pan from the oven, brush the top of the omelet with oil, and return it to the oven for 5 minutes or until golden brown.
- Cut omelet into squares and serve.
Serve it hot or warm with a baked potato, pickles, tomato, and Yogurt Cucumber Salad.
Tip — If all the ingredients are fresh, the batter can be prepared a day in advance. Cooked ground meat may be added to the batter before baking.
